That's why we say, making Bengali sweets like Sandesh does not require a reason or an occasion. Craving something sweet? Go for it. Allow the Sandesh to be refrigerated for a few hours and your sweet dish is ready in no time.
Always maintain low heat and sprinkle powdered sugar because they are easier to blend and this way your sweet will not get burnt while cooking. Later on, the mixture is allowed to cool down and then it is rolled and shaped into the desired forms. The Indian Sandesh of Bengali origin can be prepared in myriad flavors and probably that is what makes it so versatile and special.
There is one thing we would like you to know! Always use fresh chena or paneer for making the Sandesh otherwise there is a chance that they may go bad pretty fast. Plus, instead of powdered sugar, you can also use jaggery syrup for this recipe.

As a beginner, if you are worried about the taste and consistency then do not be because Sandesh is the easiest Bengali dessert that one can come across. Let's find out how to go about with the process for perfect and tender Sandesh to show up on the table.
Take a saucepan and bring the full-fat milk to boil. Maintain the heat on medium as you do not want to burn the milk, the aim is to warm it up. Add lemon juice or yoghourt to curdle the milk. We need to make the chena or paneer for this recipe.
Switch off the source of heat and allow the milk in the pan to completely curdle. A muslin cloth is used which is placed over the colander and the paneer is drained. While the excess liquid flows out, the grainy and tender curdled solid portion gets left behind. This is what you need for the dessert and not the liquid portion. Rinse the paneer under running water and squeeze it hard to remove the excess moisture from the spongy solid remains.
Knead the paneer with almond powder and then add sugar to the mixture. Don't forget to season with cardamom powder. Over low heat, cook this mixture. Fry lightly for only three to four minutes and then let the whole thing cool down completely. Again the mixture is kneaded and then rolled into small balls which are pinched off from the main dough. Flatten between your palms to give the shape of circular discs.
